The paperwork, as simple as the law allows
For most first businesses a sole proprietorship or a one person LLC is enough. A corporation is for later, if ever. An accountant can tell you which in one conversation, and it is worth the hour.
Whatever you choose, open a separate business bank account the day you make the first sale, and never mix it with your own money again.
